Granola is definitely one of my favourite things to make at home, not only because it's so simple to make it healthier than store-bought, but because it is so easy to customize to your liking. I modified my usual peanut butter granola by adding in some pumpkin seeds and dried cranberries this time to add a few more flavours and it turned out great! This granola is a great source of protein, fibre, and healthy fats, as well as important vitamins and minerals including potassium, magnesium, iron, manganese, copper, zinc, phosphorous, and thiamine. One of my favourite ways to enjoy granola is on top of coconut yogurt with mixed berries and cacao nibs - a perfect breakfast or snack!
Ingredients:
2 cups old-fashioned or quick oats
6 tbsp all-natural peanut butter (runny)
1/4 cup honey or maple syrup
1/4 cup pumpkin seeds
2 tbsp dried cranberries
1 tbsp chia seeds
3/4 tsp cinnamon
1/4 tsp sea salt
1/2 tsp vanilla extract
Directions:
Preheat oven to 325F and lightly grease a large cookie sheet. Mix everything together in a medium bowl until well blended. Spread the mixture on the prepared cookie sheet. Bake for 18-20 minutes, or until lightly browned, stirring the granola once about half way through. Remove from oven and once cooled, break apart and enjoy! Store in a jar or air-tight container for up to 2 weeks.
