Salads are a meal I enjoy all year round. With so many options and different combinations, I never get tired of them, especially when they are so easy to throw together in less than 20 minutes. This Asian Ginger Sesame Chicken Salad is no exception. It is so full of flavour with a nice crunch, and contains every colour of the rainbow! I used chicken in this recipe, but crispy baked tofu or turkey would also work just as well.
Ingredients (makes 2 servings)
Ginger Sesame Dressing:
2 tbsp coconut aminos (or tamari or low-sodium soy sauce)
1/2 tsp ginger, minced
1 garlic clove, minced
1/2 tbsp coconut sugar
1 tsp rice vinegar
1 tsp sesame oil
1/4 tsp black pepper
Chicken Salad:
1 cup precooked chicken pieces
1 cup romaine lettuce, chopped
1 cup kale, chopped
1/4 cup purple cabbage, chopped
1/2 large carrot, shredded
1/3 red bell pepper, chopped
1/3 yellow bell pepper, chopped
1/4 cup almonds, chopped
Optional toppings: green onions and sesame seeds
Mix all of the dressing ingredients together and set aside. Chop up all of the vegetables, chicken and almonds, and mix together in a large bowl. Add the dressing and stir until everything is well blended. Serve and top with green onions and/or sesame seeds, if desired. Enjoy!
