Energy bites are a staple in my kitchen, and are pretty much made on a weekly basis. Other than being a healthy, filling, grab-and-go snack, I love how quick they are to prepare and ready to eat in minutes!
I typically make them with peanut butter or almond butter, but switched it up this time and used tahini instead. I love using tahini in the kitchen - in dressings, sauces, and cookies, so why not in energy bites too? The combination of applesauce and tahini is so flavourful, and by using tahini, you're also getting a little extra calcium than you would with other nut butters. Tahini is also a good source of copper, selenium, phosphorous, iron and zinc.
Ingredients
1 cup oats
1/4 cup almond flour
2 tbsp flax meal
2 tbsp tahini
2 tbsp unsweetened applesauce
1.5 tbsp real maple syrup
1/4 cup shredded coconut
1/2 tsp cinnamon
1/4 cup dried cranberries
Directions
Mix everything together in a large bowl. Roll into balls (makes about 10), store in the fridge and enjoy!
